This is among the best of boutique in Puglia. Each stylish room is set in close enough proximity to the sea to hear waves breaking during the night. 

Most have terraces and easy access to the six gorgeous pools – notable in a place with just 13 bedrooms. The Panorama Suite has its own plunge pool on one terrace, and wonderful views of the Adriatic from the other. 

Days begin with breakfast served in rooms or private terraces, and unfold between poolside lounging and seaside splashing. The private beach is next to the hotel bar, a perfect place to enjoy an oyster Martini. Dinners are served at Saleblu, a restaurant right at the waters edge, with stunning sunset views. 

It’s a hard hotel to leave, but there’s plenty on offer in the area – they will organise fishing for or trips to vineyards and olive groves. It’s possible to hire the hotel yacht or a Vespa to explore the beautiful surrounds.
